Ingredients
- 1 cup flattened rice (poha)
- 1 finely chopped onion
- 1 finely chopped tomato
- 1/2 cup green peas
- 1/4 cup peanuts
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Curry leaves and coriander for garnish
- Salt to taste
Instructions
- Wash the poha: Rinse the flattened rice in water and set it aside to soften for about 5 minutes.
- Saute the spices: In a pan, heat oil and add mustard seeds. Once they splutter, add chopped onions, curry leaves, and peanuts. Saute until onions are golden brown.
- Add vegetables: Add chopped tomatoes, green peas, turmeric powder, red chili powder, and salt. Cook until the vegetables are tender.
- Mix with poha: Fluff the softened poha with a fork and add it to the pan. Mix everything gently until well combined.
- Garnish and serve: Garnish with fresh coriander leaves and serve hot.
